Why egg colors vary
Every egg starts out white. Blue eggs are blue all the way through the shell, while brown eggs get their color as a coating near the end of laying. That is why brown and chocolate eggs can look lighter late in the laying season, or when a hen is older or stressed. Shades vary from hen to hen even within the same breed, so the photos above show typical colors, not exact matches. Egg color has no effect on taste or nutrition.
